    Brisket and Bricks

    Harry Soo puts bricks underneath his brisket when cooking ( https://www.youtube.com/watch?v=bHPb83AKel8 ). Has anyone tried this and gotten better cooking results?

      Bricks or wood chunks?

        I’ve used wood before but bricks would work too. Just keeps the liquid from pooling so the bark has a chance to set.
