Prime Rib Trial Run
​​ I’m hosting Christmas Eve dinner for my family and plan on doing Prime Rib. Wanted to do a trial run since I have only done a prime rib once before a few years back. Our local grocery store is running a sale on bone in choice prime rib for $4.88 a pound. Bought a 6lb roast today trimmed it up and cooked according to Meatheads recipe. Used the WSCG with the SnS and KBB, avg temp was 235. Cooked indirect to 115 and then seared to 128, turned out terrific. Will be following the exact same steps on Christmas Eve plus making gravy with the bones. Don’t really post here much, but lurk every day and wanted to thank every one for all of their input on this site. It has definitely made me a better cook and will make my family happy when they are eating on Christmas Eve!!

I of course love smoked meats of all kinds, but also like quick cooks like chicken portions, pork tenderloins, steak and fish. Really into cooking of all kinds.
My outdoor kitchen has a Lone Star Grillz Adjustable and it is wonderful. There also is a Pit Boss 5 Burner Ultimate Griddle and a Pit Boss Copperhead pellet grill.
There is an outdoor fire pit that has grilling capability and limited Santa Maria-style grill raising and lowering.

This post convinced me. I did a poll on our family chat for turkey, stuffed turkey breast, stuffed pork loin or prime rib for Christmas dinner and only prime rib got votes. I'll follow Meathead's recipe and cook on my ancient Kamado at 225 indirect. I'll bring it inside to crisp up under the broiler rather than trying to re-stoke the fire.
