We decided to try a whole prime rib roast for Christmas this year, along with our fried turkey, and here is how it turned out: AWESOME!
Costco had USDA PRIME whole prime rib roasts for $10.99 / pound. We picked up a 17 pounder. We cut about 1/4 off it for a later cook. After trimming and removing almost 3 pounds of thick fat we tied it up, salted (kosher salt) and put in fridge overnight. Christmas morning we rubbed it with olive oil, rosemary, thyme & garlic. Let it sit for a few hours then rubbed it with some pepper, garlic powder, onion powder, and smoked paprika. Then put it on the Weber with a slow n sear and grilled it at about 230 degrees until it reached 115 degrees (had an internal thermometer), about 2 hours. Put some grill grates on and got them screaming hot. We then seared that bad boy carefully and it was AWESOME!
It is amazing what you can do with a weber grill and a slow n sear.
