Its 3:30AM and 14 degrees out - I am questioning my life choices - but with a brisket.

Using a WSM - with a insulation baffle and a 6lb flat brisket.

Right on brother. Many a times my neighbors will see me outside (some just smell me outside a few blocks away when they get up in the morning) just cooking away with the same set up and time. At that time, my better half just shuts the bed room curtains and puts in the ole ear plugs. With a flat that size it shouldn’t take all that long.

Ain't nothing wrong with that. What better company to have for pondering life choices than a brisket? Keep posting photos as it progresses!

Most of this group would be out there too. Around here, a hurricane or nor'Easter is the only time I'd consider not lighting a grill. And usually, they just cause me to open the garage door and put the grill as close as possible.

As long as it isn't windy and no precipitation the WSM can handle the cold.

I've been there my friend! I think many of us have. Looking forward to seeing the results.

Most definitely. Heck last April I was running my 14.5 WSM in 12 degree temps. 12. In April. Insane. But that's Michigan for you.

14 is my limit, although there was a time last year I did a cook at 6f. I’m just to old to be thinking 3:30 am, minus degrees & cookin, no fun.

Think you made a good life choice. It will feel that way by dinner time at least, if you are still awake.

I’ve run my WSM at 25F (which is damn cold in western WA) and done just fine. A couple years ago I went to the Potato Bowl to see UI v CSU .... temps started at 16F, by end of the game they were 12F ..... that was crazy
