    Beef Short Ribs Question

    I have these huge beef short ribs dry brining in the fridge. How long can these stay in the fridge? I’m not able to cook these until next weekend? Should I vacuume pack and freeze these or will they be fine in the fridge?

    I’d go ahead and freeze them. They don’t have to be fully thawed when you put them on to cook. Just remember that they will take a bit longer to cook if you put them on frozen.

      You can go either way. They will be fine in the fridge. I have left a brisket on a week long dry brine, without any issues.

        I couldn’t pass up the price at 1.80 per pound. I’ll leave in the fridge and cover with a towel. I’ll wait and trim them up later. These things are huge, bigger than my forearms, total weight was 27 lbs.
