    What to do with eye of round?

    I have two small angus choice eye ofround roasts. What would you do with them?

          We brown them in a skillet, add water, and cook until tender. Adding carrots and potatoes towards the end and making sure there is plenty gravy for the rice.

          Season how you want. Two zone Front sear
          Then HOT and fast. 400ish. Turn so one side does not over do. 5-6 mins a lbs for a base line pull at 130. Or rotisserie.

                If you don't want to do jerky, try Bresaola! Ain't BBQ but it's good!

                  Jerod Broussard Method and low n slow until 130°-140°. Your choice/preference. Cut on slicer #5 or #6. Make-um-sammiches.

                    Roast Beef is a good thing for eye of round. Salt, pepper or your rub of choice and cook at 350 on smoker until you hit 125-130 degrees. Slice thin for roast beef sandwiches or French dips.

                        Well, I blew that one. I tried a variation of "President Ford's" braised round steak. I did something wrong. Probably didn't simmer long enough.

                          It's a tough cut to do anything with. Very little fat,very little connective tissue, working muscle. Needs help. Like gravy.
