    Cold grate technique or grill marks for steak cook off?

    What's your opinion for steak cook off, traditional cross hatch Grill Marks or an all over sear using Cold Grate method?

    Traditional cross hatch grill marks are soooooo .... traditional that I would be concerned in losing points for appearance. Unless you think you can make them up elsewhere using the cold grate method.

      Thanks,that's what i am worried about but I was wondering if it would be made up in taste with more browning.Because as we know Mrs Brown is soooo good!

      I guess my answer would be that people so much expect that a "great steak" will have cross hatched grill marks, that you almost have to have them no matter what.

    Give the judges what they expect, which may not be what tastes best. You know better but they hold your trophy.

        Having never competed I looked at the SCA website and they have a video featuring steaks. They feature the hatch, for what it's worth.

            IMO, The hatch appears to be what some folks look for but folks in the know understand that a good "all over" char has a superior flavor.

              I would lean toward giving the judges the best version of what they expect. Focus on getting the wall to wall med rare with no gray and some killer grill marks.

                Come to my house and cook, Dean , I won't complain none regardless. Don't even care if it's wall to wall pink.

                  I might of been in your area a couple week ends ago. I was at a buddies cabin on Lake Thirteen smokin' a load of ribs in the drum for a group of friends.

                  Huskee, thanks! This was a very nice charity event Jon Solberg did a fantastic job of running this, very well organized and professional. My hats off to him ,I'm sure he made Joe Friday Sr very proud that they are taking care of his kids for Christmas!
