    1st Prime beef secured

    Joined Costco today just for the meat section 😇

    Wouldnt you you know I stumbled onto the beauty below and some prime strip steaks and just had to bring them home!

    question on the brisket....how long can I leave it simply refrigerated? The cook will be on or around the 4th....do I need to freeze it for that?

    That's gonna be good eating on July 4th!

    I usually leave my briskets in the cryovac, in the fridge, for anywhere between a few days to a few weeks. You're key date is the Pack Date. From everything I've read and heard on here, anything up to 30 days from the Pack Date is just fine.

      If still under vacuum, no problem leaving until the 4th to cook. Expect to be sad when you see how much fat you have to trim. It will be a 10 pounder by the time you are done trimming.

      OneEyedJack my local butcher charges $7/lb for brisket, but he trims it for me for that price. I still mostly buy Costco Prime and trim myself.

      To be sure....I've trimmed plenty.

      I'm curious to see if I detect a difference in the prime grade. Most of the briskets I've done have been select. A couple choice grades.

    Costco loves us, or hates us enough to torture us mercilessly. Tough call.
