    Corned Beef!

    Okay, gonna track it here ..... Picked up a 14.75 lb brisket at Costco today. Took the point off. I'll smoke it some time later in the spring. Trimmed all the fat, since it's going to be turned into corned beef. Took about 4.5 lbs of the flat for the corned beef. The remaining 2.5 lbs of flat I'll turn into stew, or something.

    I'm using Meathhead's technique, including his pickling spices and all of his optional add-ins.

    I'll take more pics when it comes out of the cure, when I cook it and for dinner :-)

        Looks like you have a bit extra fluid in there. Toss a tri-tip in and see if a corned tri-tip works as well!

          That's 1 gallon of distilled water, the brine ingredients and 4.5 lbs of flat :-)

          That's a huge cutting board, too .... like 18" long ... the big KitchenAid from the 3 pack that Costco sells

          The store had a 21 lb brisket .... that was very tempting. I'm second guessing myself not buying it.

        What does that smaller tag under the label say ecowper ?

        It looks like it says PRIME.

        Oh when are the COSTCO gods going to shine there love on the east coast!

          I hate to tell you this HawkerXP .... it says PRIME. Oh, and it was $2.99/lb. Which makes me grumpy cause just a couple months ago it was $2.79/lb

          But you can pick up Corned Beef at Katz pretty easily .... I envy that.

            ecowper how long did you simmer yours for? Did you change out the water at the 30 min mark? I'm asking cause I did one too and it was cooked past 190 in 2 hours?? (I actually pulled it at 202) still dang good but kind of wondering how it cooked so fast? Maybe I miss read the times?

              GadjetGriller I changed the water at 30 minutes. I didn't even check the brisket for tenderness or temp until the about 2:45 hours, figuring that would be when I wanted to add taters and such. It was 200 and probe tender. I suspect that the timing from Meathead is probably more applicable to the pre-packaged corned beef.
