    19.95 lbs before trimming...

Almost 14 lbs after trimming, so not too bad since I trim pretty heavy. I've had some drop all the way down to 10 from 20.

    Tis a 26" kettle.

I think you are going to need a bigger bun. (My apologies to Jaws)

That's one big hunk of meat there. Good thing it trimmed down to 14lbs or it wouldn't have fit.
        But where's the snow?

I think this is 7 hours in and running around 240-250.

Danjohnston949 don't worry, still plenty fat, it's just I despise 4" fat caps. The 26"er came by surprise delivery last year or year before. Somewhere circa around that time.

What is the average burn time you are experiencing when running at 240-250? I am seriously considering the SnS XL for my 26.

Fat cap was plenty dark, still working on the top of the flat. Marlo agreed it needed to go some more. 163 internal.

The bark on top was not quite what I wanted, however I needed to head somewhere so I went ahead and wrapped it up and stuck her in the oven at 225. This was a really good Select. The flat was not overly dry and the point not overly fatty. 41% yield- 8 pounds 3 ounces meat.
