Ok, NOW I'm getting excited for Christmas! 18lb 7 rib Black Angus (still not positive what that means) roast. The butcher took the bones off and then I carved off the fat per MH's roast recipe and also cut off the ends (I'm thinking I'll make some steak tartar with it). 5lbs of bones, 2.5lbs of fat and 1.5 of steaks leaving me with a glorious 9lb roast - geez, I hope it's enough!
It's only for 12 people but one is my 25 year old nephew who ate 6 appetizers (huh??!) before his entree when we went out for dinner last week. He's skinny as hell but just packs it away. Anyway, I'm excited to cook this on my Primo - I've only ever cooked prime rib in the oven and never one this big. I'll let you know how it turns out. It's for Christmas Eve dinner.
