First time short ribs

    First time short ribs

    I want to smoke some short ribs, but I wonder if the best way would be to put some smoke on them and then braise them to tender, or if they'll tender up in the smoker? Any thoughts?

    Nope imo smoke them all the way. Can you elaborate. Are they singles or a full plate? Full length or the little ones? How thick and which cut?

      I'd dry dry brine them, hit them with a salt free beef rub like big bad beef rub, and smoke thdm till the bark is dark and set. Then wrap them all together in foil and take them to 203°. Then rest for an hour. Try to get your hands on some full plates; thats where the magic happens.

      Thanks. I've done a couple plates These came in a half beef I bought last fall. I'll foil them.

    I have cooked plates and shorties all the way on the smoker. They get nice and tender when you do!

            They'll get tender alright. And when you do them as a full plate, they'll stall too, just like other large cuts. Takes me typically a good 10 hours for those, and they are just some of the best Que there is.

            I think texastweeter's plan is a good one. The only tweak I might suggest would be to do a foil boat rather than a total wrap so that they don't end up braising after all. Either way, they'll be great!

            I have used Malcom s recipe which includes braising. The sauce comes out incredible along with the ribs. Just another method to consider.

                For short ribs plates, "dino bones", I cook like a brisket. The Only Smoked Texas Beef Rib Recipe Y'all Will Ever Need (amazingribs.com)
                Also, I use YouTube to search for how to smoke/BBQ beef short ribs.​

                  A word of caution if you ever think of smoking, then finishing in an Instant Pot or the like: the smoke permeates the interior of the pressure cooker, and you will have to take all the little pieces apart and wash them, do the lid and interior pot in the dishwasher (if you have one), and replace the gasket.

                  And, you know how I found this out.
