    Well, as long as it's for Kathryn...
    I'm in!

    As a matter of fact, I just prepared the Bronco for a nice 1.25lb. Ribeye.
    Reverse sear over charcoal... Yes sir.

    A little S & P, garlic and onion powders... Not too much...

    Aim for 200° - 225°F smoke temperature to IT if 110° - 120°F. Then rest to reconfigure the Bronco for searing and crank up the BTU's.

    Good eating tonight!

    Sunday: Lagostino lobster tails\Shrimp scampi...
    Seafood Scampi! Roasted bay scallops.
    Sides: TBD

      Oh gosh, Panhead John and fellow Pit friends, I'm awed and honored to have you all cooking steaks next weekend. I'm going to vicariously enjoy each and every one.

      PJ must have known that every now and then I list my Major Meat Moments Over the Years for my family who just roll their lesser carnivore eyes.

      One of my best MMMs was a huge cowboy ribeye in a cruise ship restaurant not long after we were first married. The thing filled the whole dinnerplate. I didn't eat anything else for that dinner except the olives in my martinis. My husband says he is still astounded that I ate that whole steak.

        Are you going to be the judge of the photos? If so, I’m in. I don’t trust Panhead John - he deducts points for things like poor presentation, inadequate overall appearance and pungent taste: things totally unrelated to BBQ! What does pungent even mean?

      Jerod Broussard mentioned earlier he’s gonna do a “surf and turf” next weekend. Some shrimp to cook, along with his steak. Well, I ain’t about to let that sumbitch show me up! …..Just got back from Costco. Here’s what I’ve got planned.

        Well. I just picked up myself a 38oz bone in ribeye for tonight. So I’m good right now.
        BUT!!!! That’s now.
        Next weekend Sounds like a great time to cook a steak. Especially if it’s for a good cause like honoring fzxdoc And I will make the perfect side as well. You guessed it. A steak. 🙌🙌

        If I get a chance to cook a steak next weekend, I'll be sure to dedicate it to Kathryn and her recovery. It will have to be one to the ribeyes already in the freezer, since they are bought and paid for... it will have to be Friday or Sunday, as I have a bonfire and potluck on Saturday. Actually, I am thinking I could take a steak and cook it on a stick over the bonfire!
