I made it a couple of nights ago and it was great. I was doing a batch of bacon in the smoker and when it was done I finished the guisada in there for about an hour and a half.

Carne Guisada seems to be similar if not the same as Chile Colorado (if made with beef).
I have some Chile Colorado recipes here: http://markiscooking.com/?p=18
and here: http://markiscooking.com/?p=19

This is what I ended up using.
Prep time: 30 min
Cook time: 90 min
Serving size: 5
Ingredients:
2 1/2 tablespoons canola oil
3 pounds beef chuck roast
3 tablespoons All Purpose flour
2 cloves garlic minced
1/2 minced green bell peppers
1/2 cup minced onions
1 teaspoon cumin (to your taste) (may try 2 tsp next time)
1 tablespoon chili powder
1 (8-ounce) can tomato sauce (may try 4 oz next time)
1/2 finely chopped jalapeño pepper seeded
Directions:
Cut meat in strips and simmer in oil in a covered skillet until meat is white. Add flour and brown.
Add remaining items and mix well. Add water to cover meat and bring to a boil.
Simmer 1-2 hours or until tender.
