    American Chile Powder, commercial recipe for Cowboy Pepper® Chile Powder

    Pardon my metric weights, I will attempt some conversions to tablespoon, teaspoon, but this is my actual commercial recipe sold in local markets here in Bend, Oregon. (Scaled it down a bit as most folk don't need 7 pounds of chile powder.)

    40 g ancho chile powder
    20 g guajillo chile powder
    20 g pasilla chile powder
    20 g chipotle chile powder
    60 g cumin ground
    60 g granulated garlic
    40 g granulated onion
    40 g mexican oregano
    40 g Coriander
    16 g Cacao (Yeah, ok, cocoa powder, but cacao is raw, cocoa is processed.)
    16 g Coffee dark roast, ground to the consistency of flour.


    Yep, gee thanks, Steven, we don't all have metric scales, so...

    This is rough, but based on the percentages...
    Try

    4 tbs Ancho chile powder
    2 tbs each of quajillo, pasilla negra, chipotle chile powders if you can find them.
    (Just using ancho and maybe some cayenne pepper will work fine, but then that's not my blend.)
    3 to 6 tbs of cumin
    The same for the granulated onion and garlic, but these can be omitted for fresh chopped onion and garlic which is gong to make a better chili stew ennyhoo.
    2 to 3 tbs of coriander, you could skip this also, but it marries well with the cumin
    2 tbs of mexican oregano, plain is fine
    1 tbs cocoa powder
    1 tbs finely ground coffee, like flour fine.​

      Wonderful!! Can't wait to try this out. Welcome to the Pit from the northern Virginia burbs of the nation's capital! Bend is my old stomping ground, I did my grad school work in geology at U Oregon and spent several summers out in the Bend area, and points south and east, mapping lava flows and taking samples... such glorious country out there. Great to have you with us

            Looks delicious. And as a homebrewer I have a scale that does 1/10th g, so the metric is good for me!

              Oh, I really like this! Good heat and wonderful earthiness. Also, don't apologize for metric. I've found that I've switched over to doing nearly everything by weight, especially after my forays into pizza making.

                I feel an experiment coming on... dual pots of chili, one made with this, and the other with the Carroll Shelby spice mix that is my current go-to...
