      My boyfriend just said it's the best thing I've ever cooked and the best thing he's ever eaten. He just swallowed like two pounds of it without chewing. Triumph!

        I hope he was a gentleman and did the dishes and cleaned out your cooker. BTW, I may have missed it, but what kind of a pit did you use?

        He did both. He's a gentleman for sure. He also trims it for me, since I'm a danger to myself and others with knives! For this, I used my Weber Kettle Grill, equipped with my new Slow n Sear from Adrenaline BBQ Company. It went swimmingly.

          Awwww, thanks you guys! You're my pit crew! Ha ha. @PitBoss was spot on when he said to wrap it when it was 190. It equalized the temp between the point and the flat and kept it really moist. And the bark wasn't compromised in any way. boftx ,I hate to disappoint you, but the only thing I'd do differently would be to make coleslaw to go with it next time. 😜 I really do appreciate all you guys talking me through. What a fun day and a fabulous dinner! Can't wait to try it again!

            GirlpoweredBBQ, great cook! That bark looks fantastic. If you didn't have cole slaw with it, what did you have? Ribs, mac n cheese, baked beans here tonight. Brisket trumps ribs every day of the week, though. Good work.
