Tomorrow's the day I KILL it!!!

I took a weekend off, which was very difficult (I hate when life interferes with barbecuing!), but now I am all set to do my second whole brisket tomorrow on the Weber Kettle with my Slow n Sear. Armed with my recent learnings, I'm geared up to go. Hope I can sleep tonight. I feel like it's the night before a big race or a battle or a spelling bee or something. Ha ha. Because tomorrow is the day that I am going to do this right!!! Can't wait! Don't expect to hear from me with any of my customary freakouts or desperate cries for help! Mark my words.... Next time I post, it's going to be with pictures of my fabulous brisket! Just wanted to share that with you all. And now back to our regularly scheduled programming.

I'm killing a pork shoulder with the Slow 'n Sear rhat now. It squirmed a little when I inserted the probe.

Remember to start fat cap up and flip that dude when the top gets plenty barked.

Woo hoo! We're all rooting for you! And I know exactly what you mean. I've been doing this a while and I still get a little twinge of excitement the night before a big cook!

I'm waiting to read all the "shoulda, coulda, woulda" remarks. Trust me, we ALL have those after every cook.

But in the meantime, GO FOR IT, GIRL!

I am a software engineer by trade with over 40yrs behind me. If I don't learn from every project, every assignment, I am doing something wrong. I treat every cook I do the same, after all I have done over the many years. You WILL find things you want to do different.

GirlpoweredBBQ How's it going so far? Any freakouts yet? Geez I'm on pins and needles here. Put the camera close to the vent holes and take a picture if you don't want to take the lid off. I couldn't sleep...I can't go make breakfast. My wife ate without me! I'm freaking out here!

I've got the feeling you're going to nail this cook. You've properly prepared. You've already smoked one so this one you're just going to fine tune the process, methods and techniques. You've asked the RIGHT questions before and you're thinking it through properly. You will know how to react when you notice things have gotten squirrelly, which ALWAYS happens.

We're ALL pulling for you girl... You got this for sure!👍

      I can't wait to see the results...👍

Omg, I'm dying laughing over here. Yeah, I've screwed up one brisket royally (my first smoke, when I tried to do it on the WSM 14"...nightmare), made one fabulous point, turned a flat into jerky. This time, for sure! ☺

boftx ,we're sorta in the same business, I manage front end development and interface, as well as all content, copy, and UX. Of course I am kidding. My whole approach to work, development, and everything else is "let's test it!" Until I've done an A/B or multivariate, it's all a guessing game! But, you've gotta start with unerring belief, right? Visualize the positive outcome!!! What do you build?
