Just finished cleaning the kitchen and deck from a day of cooking in Mr. Bones' honor
Started the day with two bone-in chuck roasts on Mr. Fancypants, the WSCGC:
Later on in the day, a rack of SLC ribs joined the Memorial Cook:
Next, to make the Mr. Bones Quickie Bourbon Beans. Here are all the ingredients except the BBQ sauce which I added once I thought of it.
I made a much smaller amount than Mr. Bones did for each of his cooks:
Ribs ready to come off Mr. Fancypants:
Ribs ready for decimation:
Chuck roasts are still in the cambro. They're looking good. Here they are on their way to the faux cambro:
Couldn't let the day pass without a special toast to our very special Mr. Bones: Bourbon, Beer and Beans:

JCBBQ , this post has links to all three of Mr. Bones' Hill of Beans Quickie Bourbon Beans recipe: https://pitmaster.amazingribs.com/fo...24#post1186724
He sort of evolved the recipe. The constant through the cooks were the proportions: usually he used 3 lbs of meats to 7 28oz cans of HyVee beans, all flavors, and 1/4 cup bourbon per 28 oz can.
I used the Hill of Beans I recipe mostly, scaled...

JCBBQ ...continued...back for 2 28oz cans of Bush's baked beans. I added some ingredients from his HoB II and HoB III posts as well.
The recipe is delicious--lots of layers of flavors. Essentially he takes super sweet canned beans and makes them savory-sweet. A genius move, really. It was a real crowd pleaser at our house. I've got some overly sweet baked beans in the freezer (made with Rancho Gordo beans) that I plan on rescuing with Mr. Bone's Quickie Bourbon Beans recipe.

ILMsmoke The cutting board & the ribs look superb! Is the board built in? Hobby, or do you sell them? 🤔
-
I didn't want to spend $500+ on a board big enough to put a whole brisket on so I picked up some scraps at the specialty wood store and tried something new. It's got a few imperfections, but once I started using it they faded away. I've got about 6hrs and $125 in this board

I wasn’t able do a long smoke today and was ill prepared not having any canned corn and no hickory chunks (Mr. Bones said he put the ‘hick’ in hickory for a long time). However, I did piece enough together to hopefully be respectful of our dear friend. The awesome staff at The Upper Cut special carved me an Akaushi bone in ribeye that I cooked on my WSCG in kettle mode using hickory’s cousin pecan for a little smoke. Served with some canned carrots.
I picked up a bottle of Buffalo Trace to give him a toast later.Last edited by glitchy; March 19, 2022, 08:02 PM.

Almost forgot to post but didn't forget to smoke some ribs to honor Mr. Bones. Found some Wagyu beef back ribs on sale yesterday at Hirsch's Meats in Plano TX. Salt brined them overnight, applied Meathead's Big Bad Beef Rub and put the rib rack on my old Weber at 3 this afternoon. My wife is preparing a bean side dish for our celebration honoring Mr. Bones later this evening. Here's the current state of the ribs.

Hahaha Troutman I don’t drink or even like the hard stuff. That toast was for Bonsey.
Funny thing is I have a dozen or so bottles, unopened, like that in the closet. And they will probably be there for years to come.
A customer of mine gives me a different one every year for Christmas.

Troutman Yes! Love me some Scotch...i alternate between that and bourbon. Glenfiddich is good stuff.
Those bones look pretty good, too

Dinner was at 8pm (not my fault *this time*) but it was a hit regardless. Wife's cousin's son said "these are the best ribs I've ever had", so that was something special to me. Very little sauce was used at the table, despite 5 kinds avail. Also a compliment.
Success all the way around.
