This is for Bonesy.
One of our last conversations, I was getting very technical on my new smoker, and what he told me was to relax and enjoy it, don't over think it, and when you can, "cook up a viking feast". Well, I was looking in my freezer last week, and thought now was a good time for that.
The end results are 5 chuck's for three batches of chili
Yeah, I know, only four in the pic, I was waiting on the fifth.
Three corned beef brisket points turned into pastrami
And a smoked corned beef flat that was dinner last night

Thanks Steve B . Haven't made the chili yet, but after steaming the pastrami and having the corned beef a few different ways, it's all been better than I expected. Still learning my smoker, and there were a few challenges, fewer than before, but, tasty.
