    I knew that these monsters were going to take a while, but that's okay...got the whole day set aside for honoring Bones' memory. Enjoying a beer or two while I wait. They are coming along pretty nicely so far!

    3 hour in and looking good
    just did my first probe test, toothpick slides in but not buttery yet another hour or so
    A friend gifted me this boutique Q sauce, today seems to be the day to give it a go

    5 hours in. Plate ribs on the right have been in a stall for over 2hrs now at 157*. And the one on the left is now hovering around 168* for the last hour.

      These beef short ribs have only been on the smoker for 1 hour but that's ok..... today's tribute is a great reason to do what I enjoy the most with my favorite smoker.

      Hey you guys….wait for me! Rubbed my ribs with a little Big Mo’s Competition Rib Rub and let ‘em sit in the fridge for a few hours. Put em on the SNS Kettle about 1:00. I’ll be doing my World Famous Brisket Beans in honor of our buddy Mr. Bones. It’s drop dead gorgeous here in H-Town today. 75* and not a cloud around.

      So wonderful to see so much love pouring out for Mr. Bones !!! Had to do a small pork rib cook on my old Webber kettle in Honor "Bonsey" on Wednesday evening after work in anticipation of the rain and cold today in SE Michigan. Yesterday we had Ribs, Polenta with Feta cheese & stuffed cabbage in his memory. Today, some of the rib meat will be part of a stir fry rice dish that my dear Janet is working on. I hope my 1st post in the Pit is ok with all of you Experts.

      I still miss seeing those regular notifications of Mr. Bones liking and commenting on pretty much every post. I am sure he would be bursting right now reading through this thread.

        Didn't have time for a long cook today, but here are the ribs I did yesterday. R.I.P. Mr. Bones You are missed around here.

          I didnt have time to do ribs today because i completely forgot we were taking the kids to disney on ice, but i cooked up a sweet wagyu denver steak in honor of the bonesy.

          Started the cook with two racks of Creekstone Farms Duroc pork ribs and two slabs of Creekstone Farms prime Beef ribs. Did Eat BBQ rub and MMD on the ribs after an overnight dry brine. The beef ribs are getting the Texas S&P. Have beans catching the drippings.

          One rack of pork ribs on the PK and the rest are on the Yoder. Still mid cook. Beef ribs now out of the stall. No wrapping today ribs are going "nekkid" as Bones used to say.
