Dear Mr. Bones;
Well what a tribute, and one well deserved !! We all miss your warmth and craziness but what a better way to hold up a brother than a Memorial Cook Mr. Bones style.
I know how much you liked Creekstone Farms meat so I ordered up some Beef Chuck Ribs especially with you in mind. To accompany them of course there had to be another of your favorites, that good old pot o bean. I chose my favorite (well one of them), a big pot of Great Northern Whites with ham hock and andouille sausage ....

Get you a big bowl of that !!!! After salt brining the rack of ribs, I seasoned them with Plowboys Bovine Bold and an extra helping of 18 mesh black pepper to give it a Texas kick. Also in keeping with the Texas theme, which I know you would have appreciated, I smoked them low and slow using mesquite.......

After about 4 hours she stalled a little so I cranked up the heat just a bit and after another hour they went probe tender right at 195*F, just the way you like 'em brother !!!

So on to your platter they went my friend !!! Made you some chimichurri to go with it to cut the fattiness of the meat and of course a big, hot, heaping bowl of those beans. Hope you enjoy !!!!!

Oh and before I sign off, my final parting shot just has to be from one amigo to another, here's to you my friend, a shot of Casamigo's Reposado tequila !!! You shall be missed !!! Adios my friend, Trout signing out !!!
