    Made Milk Street’s Thai Chicken (Kai Yang) probably shorted the sugar or should have added more. I think the next iteration will use honey instead of brown sugar. Get some lighter flavored sweetness in the blend.

    marinate for two hours in a dark brew of cilantro leaves and stems, lemongrass, brown sugar, fish sauce, tamari, garlic, coriander, black pepper, and white pepper. I added a half tsp of Asian Reds from Flat Iron Pepper Co, just to spice it up.

    milk street wants you to bake it in a 400* oven, but I decided to hang the Ki Yang on the OJB with some guava wood smoke.

      Fried baloney on the griddle and homemade horseradish pimento cheese sammiches with salt and vinegar chips. Pro tip put the chips on the sammich for some crunch and the acid cuts the fat.

        Oh dayum…. You lost me at horseradish (yeah, I’m not a good Polish girl). Loaves me some pimantah cheese, though. At work, we use pickled serranos to create our “pimento cheese”. Frigging delicious! And spicy as all get out, but so addictive. texastweeter I should send you some!

        Fried bologna sandwiches are the bomb. As kids, they were “monkey helmets” on wonder bread. As an adult, mortadella on milk bread.

          Words wouldn't do this justice.

        Made Crispy Crown three ways earlier this week using the air fryer. In my opinion Crispy Crowns cook up better in the air fryer than Tator Tots.

        First off was Poutine style.

        Next up came Loaded Baked Potato.

        Crispy Crowns topped with shredded sharp cheddar cheese, crispy bacon, sour cream and green onions.

        Last but not least Buffalo Chicken.

        Crispy Crowns and KFC nuggets tossed in a sauce made with Frank’s Red Hot, butter and white vinegar. Topped with blue cheese crumbles and green onion.

        Fresh picked corn de-cobbed and roasted in a pan with some vegetable oil.

        As soon as I took it off the heat I added three cloves of minced garlic and a finely diced jalapeño. I let the residual heat from the corn soften the garlic and jalapeño.

        Once it got to room temperature I added in two parts mayonnaise to one part sour cream until I got it to the creaminess I wanted.

        Next I added a squeeze of lime juice, fresh parsley (I’m not a fan of cilantro), Tajin, and feta cheese crumbled up. Cotija cheese was just too much money.

        Once in the bowl I topped it with a touch more Tajin, feta cheese and lime zest.

          Corn on the kettle, chops on the joe jr with some Meathead Memphis dust. Might have toed the line too close on a nice little char and burnt. Guess I’ll find out!

            Great pics of great food

          Wife grabbed me some Johnsonville firecracker brats so even though I had just cleaned the PKGO it had to be fired up for a smoke session.

          (The brats are quite bland, there is an after taste of lingering heat. But if I hadnt put smoke on them there was no flavor or heat on the initial consumption of them. Even my wife agreed).

            texastweeter be interested to see if your taste buds agree. I like spicy, wife has grown to like some heat but not a lot. I wasn't surprised at me thinking there was no heat (until quite a few minutes after eating) but very surprised my wife agreed their was little flavor and no heat.

            Smart idea!

          Reverse seared a thick cut pork chop with some hickory chunks. I used a new to me rub/seasoning called Harley’s Texas Style B-B-Q Seasoning. This stuff is great! If you’re a fan of the Uncle Chris’ Steak Seasoning, you’ll love this stuff. It’s a little different and in my opinion, it’s a little better than the Uncle Chris stuff! fzxdoc DaveD texastweeter I even put some on my corn…

            fzxdoc Check out some of the reviews for Harley’s. A lot of people are saying it’s their favorite seasoning. Reading some of those just cemented my decision to buy some. Mine will be delivered today. I borrowed some of my neighbor’s for this cook. 😎

            I just took delivery of some Harley's rub and tried it yesterday on steakburgers. Pretty tasty, I must say. Thanks for the recommendation, Panhead John .

          We hosted my wife’s family for a pizza party. So much food, can’t even begin to tell you. And almost no photos of any of the food, but it was a really great day celebrating family. I will recreate every pizza from this weekend, there were lot’s of lessons learned in my timing, I was a bit over confident if my dough being completely ready, so I had a bit of work, but nothing too bad. The highlights of offerings is a new approach to a mortadella and pistachio pesto pizza, was a crowd fav, as was my standard with Italian sausage, pepperoni, onion and green olive which was dubbed a “Chrzizza special” by a friend.

          over all I baked 5 pizzas, about 20 full size chicken wings and a garlic cheese bread, I made a garlic confit fit with a great Lebanese olive oil and dusted some fresh pecorino Romano into it for drizzling. I also made a long pan flourless espresso choc torte with a topping of homemade mascarpone, homemade whipped topping, and blended them with vanilla and espresso, served with blueberries…


          The highlight being my wife’s great niece at about 9 months old that totally captured all the attention of everyone.


          The last of the long pan torte, and my new approach to cheese bread which is similar to a Turkish Pide, or a Georgian Khachapuri.

          Fresh lavender, rosemary, oregano, basil, sage from the garden, a bit of olive oil, salt, pepper, run the SnS at 325F with a chunk of wood for smoke :-)
