    I decided to try that other mail order place Good Chop. So far, there are two strikes with broken seals on packages. This might be strike 3. I choose Tri-Tip. Imma thinking I got a picanha! Thoughts, Pitmasters?

      You inspired me to get better at plating these salads

    I am going to a car show tomorrow here in Anchorage, AK. I bought a pair of pork butts to take along and share with the Porsche Club of America- AK Region. Oiled them, just the right amount of salt and pepper and wrapped up for the overnight in the refrigerator. Smoked low and slow for 9.5 hours on the KBQ today. My wife likes it best when the rest is just finished. She gave it her seal of approval! That is going to be some tasty fare in the Porsche paddock! Click image for larger version

      great bark.

    Last night my lovely bride made us wagyu patty melts. She'd come across these pre-formed patties on the meatcase and decided to give them a try. This is the first time we've bought pre-made patties in a long, long time, and they turned out to be outstanding. Hadn't heard of this brand before.

    She sauteed up some sweet onions, then fried the burgers in the same pan after.

    No further process pics, as always I know to stay well out of the way when she's in the zone. Grilled the breads & cheese & patties & onions together for a bit before plating with McCain's craft beer battered fries. Fabulous.

    I'm not a rye bread fan, but she is, so she insisted I include a shot of hers since it is made on rye and therefore a more "proper" patty melt

    Patties were very juicy, and the beefy flavor was very pronounced. These were knife & fork all the way though, too bigga eat (and way too messy). Yum!

      I’ve had this brand before. I think BF found them at Amazon Fresh. We liked them as well.

      We just picked up some pre-made wagyu patties to eat while camping but didn’t make them yet. They’ll be made this week at home for sure.

      We also see and have tried these. Liked them. Especially when they go on "Managers Special" what I call store aged.

      I forget how good pulled pork is, and how advantageous the effort-to-reward ratio is. This was insanely simple, and it's one of the best things I've made this year.

      Porter Road pork butt from my 3rd place Monthly Giveaway, canned Bush's baked beans and home made potato salad. Another plateful of summer!

      Edited to add: Sauce from Meathead’s KC recipe, and rub is the original Memphis Dust, the one with salt.

        Back in the days before, when lots of people went into the office regularly, pulled pork was my go to for pot lucks. Cheap, low effort, can vary the flavor profile in a few directions… always a hit. It really is the best cost/benefit bite.

        And if you get some good pork for it, so much better. Good use of the prize, imho.

      PBC chicken, always wins. Wife said we were low on our pre-cooked pulled chicken, so I bought a couple birds at Aldi. Honestly, never bought chicken from them, I much prefer my local Piggly Wiggly. Aside from them being frozen, they turned out great! Slathered with Duke’s and a dusting of Plowboy’sYardbird rub. Dry brined for about 5.5 hrs.

      Tried fzxdoc cheap sausage technique to up the smoke flavor. Consider me a believer, it made a difference. Just the cheapest they had on sale works.

        Yup, tossing a rack of sausages on the rebar for a PBC chicken cook is the secret to tasty chicken and delicious sausages too! I'm happy to hear that it worked for you, too.

        I'm with you guys in the perpetual hamburger society. I was just thinking the very same thought as Mosca yesterday. That second pic sealed the deal for me - headed to the freezer to start thawing some chuck.

        hoovarmin Haha. I debated posting that somewhat unorthodox half eaten pic but I was looking for that next perfect bite and thought it captured the deliciousness pretty well.

      Threw this 5# chuck roast on the joe jr til about 160 then threw it in the oven with carrots mushrooms and onion. Turned out ok.

      Country fried steak…..on the griddle. I won’t cook CFS any other way after this. Served with mashed taters, fried okra in the CI skillet and white gravy. Cooking method for the CFS came from Flat Top King. highly suggest this if you have a griddle!

      CFS just started on the flat top, went GF flour, egg wash w/ hot sauce and buttermilk, then GF panko as my dredge process. While I was on the flat top, my wife was at the stove top with the okra.

      And with the griddle running a little hot, I kept the oil around the CFS and flipped every 2-3 minutes, here’s after a few flips and seasoning with Meat Church Holy Voodoo.

ID:	1631062 I’m happy to report that a nice rack of beef plate ribs have begun their long, lazy trip to Flavortown. They boarded the Recteq train at about 7:15 CST this morning. The train will be traveling at a smooth and comfortable 250*. They prepared for their trip by sleeping under a blanket of Meatheads Red Meat Rub of course. They will post pictures of their arrival in Flavortown in about 9 hours. Bon Voyage!

        Sid P yes it’s my favorite bbq item of all. Too expensive to have as much as I would like though. I get the Prime Grade from Wild Fork. Always terrific. I can’t wait!!

        Just so good Richard! Love it! Reminds me of what is made out this way around the various pueblos. Navajo Taco, or Fry Bread Taco - I know the bread is completely different as is the cook, but that’s what this reminds me of. So good when I could eat them years ago!
