Last night was weeknight beef and broccoli. Mise en place is key for this. And I have fallen in love with glass noodles....you don't even have to cook them, just soak them in water for ten minutes.
Steak was a NY strip sliced thin and velveted in cornstarch and soy sauce for fifteen minutes. Broccoli was par-cooked as I can't stir-fry broccoli to save my life.
Mise in place....
Steak cooked first. Goes fast; 30 second a side. Love the crust that cornstarch gives to steak in stir-fries.
Brocolli goes in to soak up the extra oil and get some char, then the drained glass noodles are added, followed by the beef.....
After a moment, add the sauce (2 tbl oyster sauce, 2 tbl soy sauce, 1/4 cup Instant Pot-made chicken stock (yum!), 1 tsp sesame oil, 1 tbl cornstarch), stir until thick and serve.
I like mine dusted with a generous amount of shichimi togarashi (Japanese pepper powder). Flavor to effort is off the charts here.
