Yeah I'm cooking a lot hotter than that in my Italia pizza oven. They are done QUICK!

I bet if you cut the tomatoes thinner they would work. Hotter oven should actually help with that, or so I would think.

      That pie looks perfecto!

Another Wednesday cook with my camping buddies. Our friend, Mark, would have been 60 yrs old today. He died unexpectedly and we are cooking 40 lbs of pork shoulder and three spatchcocked chickens for his celebration of life picnic on Friday.

We had chicken wings for lunch.

Brats tonight, however no brat buns, so I added fries to the meal to give an extra layer of flavor.

You were adding beans to the chili, you opened the can, and then your comb was gone. I think you threw it away with the empty bean can.

Almost the best movie of all time if not for the Big Lebowski.

Chuck eye beef chili with poached eggs, pureed pickled jalapenos and splash of Sriracha.

        That looks and sounds incredible!

A 13oz and 14oz ribeye I cut from a $5.99/lb rib roast last December. Thank you to rmeugene who lives down the road from me and posted about Jewel having them on sale. They were delicious and incredibly juicy!

These Calabrian chiles are popping up all over the place now

I almost HATE showing this cook, but it's what I cooked yesterday. And believe it or not, I used it for testing the new Weber Connect app as well... 4 boneless skinless chicken breasts!

I had difficulty with the grate probe and had to pull it. Thought I killed it, as it shutoff after reaching 600 degrees, even though the dome temp of the Genesis was only reading 350 to 400. But it started working again as it cooled down.

The Weber Connect has you probe ONE chicken breast, and it monitors that, telling you to flip it over when it hits 110F, and to pull from the grill when it hits 162F. Unfortunately I still used my Thermapen to check and pull the other breasts, as I had put the probe in one of the thicker ones.

Mmmm. Boneless skinless breasts with Kosmos Dirty Bird. We will use them for salads and such.

At first I was like nahhhhh then is was like YEAH! That looks so good!

We have a busy weekend of late nights/ early mornings and quick dinners ahead of us, so tonight it was 50-day wet aged Prime strip steaks, shrooms, onions, and sprouts, with a great bold red wine.

Went back to my roots and front seared these over charcoal and apple wood splits. Forgot how tasty that can be.
