      I think that qualifies as an entirely new recipe. Needle-nosed steak?

    Ribeye, Strips and zucchini over the coals with a little pat of garlic butter on the steak.

      Tonight I wanted to continue to eat up the two whole spare rib racks I smoked yesterday. (Wow, whole spare ribs do put out a lot of meat compared to St. Louis cut!)

      So I did a baked potato. I brought my Chimp up to 450 degrees (PID mode) and put a russet potato on that I had rubbed generously with avocado oil and a sprinkling of kosher salt. I let that go for 40 minutes.

      I then took the baked beans/onions/bacon mixture from last night and added about 3-ribs-worth of meat, diced up.

      I sliced up the potato, added a pat of butter, then the bean/rib mixture, then some Beso del Fuego BBQ sauce, then some grated cheddar cheese, then some Mexican crema (why not? Not like this thing is getting any healthier....).

      Incredibly good. The skin was crisp and the potato cooked perfectly. The bacon and bean mixture was just as tasty as it was last night and you had the smokiness of the ribs. The sauce gave it some needed heat and the Mexican crema gave it just a slight bit of tang that was delightful.

        My first go with my Vortex father's day gift, kettle fried chicken. Was everything I've heard about and then some! Huge success, my oldest (7 years) declared it the best chicken in the world! Thank you AR Pit Club!

        PBC Ribs and Tri tip. Ribs were outstanding, tri tip was good, but not great. 1st time tri tip, bought 2, so will give it another shot soon. Click image for larger version

          I'd say that Tri-tip isn't going to be the forte of the PBC if you want medium rare throughout most of the meat and a seared exterior. I love mine, but it has it's limitations. I never use it for steak, Tri-tip, or beef roasts.

          Pork tenderloins 1 with SPG, 1 with BBQ rub, and snacks with Cabela's Sweet Rib RUB
          super smoke 1 hour @165*F, 35 min at 375*F to internal 145*F.
          Pork Tenderloins have to be one of the easiest proteins to smoke and BBQ on a Traeger.

            A whole hog cook using Meatheads Memphis Dust. I rotisserie roasted this fat boy for 18 hours. The cook was for an annual Blessing of the Bikes at area Motorcycle Club. Needless to say, it was a huge hit!
