Tonight I wanted to continue to eat up the two whole spare rib racks I smoked yesterday. (Wow, whole spare ribs do put out a lot of meat compared to St. Louis cut!)
So I did a baked potato. I brought my Chimp up to 450 degrees (PID mode) and put a russet potato on that I had rubbed generously with avocado oil and a sprinkling of kosher salt. I let that go for 40 minutes.
I then took the baked beans/onions/bacon mixture from last night and added about 3-ribs-worth of meat, diced up.
I sliced up the potato, added a pat of butter, then the bean/rib mixture, then some Beso del Fuego BBQ sauce, then some grated cheddar cheese, then some Mexican crema (why not? Not like this thing is getting any healthier....).
Incredibly good. The skin was crisp and the potato cooked perfectly. The bacon and bean mixture was just as tasty as it was last night and you had the smokiness of the ribs. The sauce gave it some needed heat and the Mexican crema gave it just a slight bit of tang that was delightful.

I used the ‘vortex kettle fried chicken thighs’ recipie from Attjack. I didn’t have dill pickle juice, so I brined in salt water instead. It’s a game changer.
