      So what do you call these? We always called them "Gas House Eggs" I have no clue why, but I used to love these in the morning when my dad would make them. Great looking cook, my friend. Love that EVO too.

      I wonder what the story behind the "Gas House" name is? I think I like "Egg in a Nest". I can't really remember what my mom called them but probably "Egg in Toast"?

        "Tomato pie" is a thing around here. And it's delicious. Yours looks delicious!

      Taking advantage of the 85 degree weather to have a mixed grill tonight. Came across super marbled short ribs at Sams Club today and couldnt pass it up. Also made chicken and skirt steak and served with a chimichurri, some roasted potatoes and a cucumber salad

      Picked up a couple of tri tips last weekend when in Montana. One with Montreal steak and one with Meathead Beef.

        I fell in love with tri-tip last summer. It has now become my go-to meat and my favorite beef to cook. There is so much you can do with it and I have never had a bad piece. And, it is affordable.

        That’s a cool looking smoker.

      I hadn’t done any stuffed bell peppers in a while so I thought I’d do that tonight. I’ve always done them in the oven, but thought I’d try them on the smoker…aka Bronco. Instead of the usual hamburger meat I used boudin and Jimmy Dean’s Spicy breakfast sausage. Instead of a regular cheese topping, I used this Queso that’s sold at HEB and other grocery stores in parts of the country. This stuff is really good!

      After browning the sausage I mixed it in a bowl with the boudin, which is also sold as a rice dressing, and a can of cream of mushroom soup. Sprinkled it with Tony’s and some garlic and onion powder. 5 minutes before they were ready, I put on the Queso to melt up. Very good.

        Thanks everyone! DTro Instead of hamburger meat, I’ve used the above mentioned boudin, spicy breakfast sausage and even ground hot Italian sausage. Whatever you like, you can also do a 50/50 mixture of that and hamburger meat. Sprinkle with Tony’s.

        Panhead John Thanks PJ! Got me thinkin’. I used to stuff bratwurst with jalapeño and cheese. Now I’m gonna stuff my jalapeños with brats and cheese, and, I see no end to the bell pepper stuffin’ exploration! Mmmm

      just cooked Tri Tip for the first time using meatheads recipe and it was fantastic! Like a filet with a little texture and taste, just delicious! will definitely be back to Son of a Butcher in Birmingham AL to buy more!

      Beer brat night. Wife and I each had two different style dogs - one with the onions & bell peppers that boiled with the brats in the beer, and one with a sauerkraut from a local market that we like. Both were great!

      I bought way more beer than was needed to boil the brats, but don't worry I found a use for all the extra beers...

        Midway the last time I saw it here, it was over $30 per pound! The fish guy said it was because of over fishing. I want to say around 2018- ish. After that I just stopped searching. I used to buy a couple sides and portion/freeze so I could enjoy over the year….

        Now I am going to search for some this week. Wish me luck!

        I saw some in the Grocery store here for $40/# last week. The frozen stuff from last year is around $15/#. The price for fresh copper river sockeye usually drops to around $20/# right before the end of the season.

      Picked up some live spot prawns from a shrimp boat at the harbor this morning. Made ceviche. Served with tortilla chips and rum punch 😋.

      I was 70 degrees today. I am cooking for a wedding rehearsal this Friday. It will be 106. Yikes. I sure enjoyed today.
