My wagon is across the road from my house. I parked the patties on the buns and moseyed on home without taken a pic of them. I did manage a just before shot.
5oz 70/30 ground beef, smashed and topped with sliced jalapenos mixed into a thick cheddar cheese sauce and capped with a slice of cheese.

Here is a little brisket experiment is did for the holiday weekend. I was inspired by Bradley Robinson (aka Chuds BBQ) to try chopped beef sandwiches. While I won't know how the final product will be until later this weekend, I can tell you the brisket tasted quite good.
I decided to have fun with the cook and try a few different techniques including tossing fat trimmings into the fire, using the foil boat method instead if the more traditional Texas Crutch and finally I poured some smoked tallow over it for the rest.
I had a mess of pulled pork in the freezer, decided to do something about it. Made Birria, and tacos with it, in place of the usual chuck. The pulled pork added a smokey flavor that I thought really added to it. The tacos are so messy though that I think I will just make the stew from now on and have tortillas fried up with cheese as a side to dip.
I found this Primo Jr on Facebook market place, before buying, I checked the reviews here and bam! , put it to work last night for some wings and a pre soaked pork tendie. I think I’m in love again 😂
A perfect day here in the Milwaukee, WI area. So I moved the Wibs up on the weekend schedule to today. Going to be HOT here tomorrow and Monday so I’ll do the quick cooks on those days. I will post more pics when I pull them off.
Finally got the grill set up and after some speed bumps made some cream cheese! One was covered in everything bagel seasoning and the other was garlic salt and pepper flakes. Topped with red chili jelly!
He layed on the couch the entire time, knew the auger was working because every time it would push pellets out he'd turn and stare at it. Definitely needs something good after that performance! 🤣
I made pizza tonight and it turned out pretty good. I cooked it on the gas grill, I bought six 4.5 x 9 x1.25†fire bricks, put these in my Napoleon gas grill and cooked my pizza. The gas grill will get to 600F a lot faster than my Primo XL. Here are a few pictures.
This is a Neapolitan style crust and I may have gotten carried away with toppings. I used parchment paper under the pizza and that is good trick. My grill has a rear burner which is used with the rotisserie but it helped to get the top cooked in time and I rotated the pizza as it cooked. The fire bricks were $6.99 each.
My wife suggested I buy a pizza oven but I don’t have a good spot to keep it, I thought this idea may work.
I tried to cook pizza tonight, it was very windy outside and the bbq was not heating up and I noticed the control knobs on my grill had popped off due to heat. I think the fire bricks were holding the heat in which was affecting the control panel, they are spring loaded plastic knobs and heat caused them to pop off. I may have to buy a pizza oven now or learn to use the Primo.
