      Looks SO good. With all the amazing bread on this forum I can’t believe I still haven’t tried baking a loaf myself. Might have to get serious about adding it to my "New for 2022" cooking list!

    Dinner tonight is from the Omaha Steak shipment I was gifted a few days ago: Tenderloin steak, scalloped potatoes, caramel apple tartlet.

      Adobo spiced spineless chicken on the Grilla OG. Cooked at 350 with Char Hickory pellets for an hour.

        Breaking in the new Low Profile Slow and Sear. Click Tri-Tip rubbed with Oakridge Santa Maria seasoning. Reverse seared on the WSCG.

        Pan seared flat iron with a mushroom cream sauce over rice. Haven’t made this in a while, not sure because it is wonderful! Used red wine instead of white and substituted sour cream in place of cream. The testament of goodness is when your 17yo son gets up from the table and serves up seconds….knowing there’s a heap of mushroom in the sauce

          Looks great! No snow in your neck? Not much but steady here in Western Mass. Got the shovel out for my wife. Asked her to have things cleared up by 900 when I get up. You think I overstepped? Yep, I did. Luckily after 49 years she does not take me seriously. Honestly, I do not take myself seriously.

            Thanks! Cook was last night. I'm up in Maine today got three inches up here.

          Made some breaded shrimp in the new deep frier tfal deal that was posted here recently. One hiccup, seasoned the shrimp in spiceology raspberry chipotle, got the oil heated up, realized i had no breadcrumbs. So these are officially honey bunches of oats chipotle shrimp. Final verdict, they taste like honey bunches of oats with a chipotle kick but were delicious, paired with a sweet thai chili sauce.

            Shut the front door! That is beautiful. A restaurant I worked at years ago did a key lime pie. They used Nellie and Joe’s key lime juice. Works very well if you can’t get the real thing! Lime zest garnished the whipped cream topping, like you did here. Now I want pie.

          Made some eggplant parmigiana tonight. I fried the eggplants pretty much the same way as the shrimp are fried in the shrimp parmigiana recipe RichieB posted recently.

          Made a sauce by roasting some CSA plum tomatoes and an onion and then cooking up with some hot sopressata (because I fell in love with the sopressata in my recent pasta 'ncasciata) shisitos and fresh basil. I put cooked pasta with the sauce in the bottom of the pan.

          Then I layered the eggplant, topped with fresh mozzarella and a bit of sauce. More shisitos went between the eggplant slices. After some oven time, it came out beautifully:

          Roast beef leftovers on freshly baked kaiser roll. Pepper Jack cheese and hit up with a bit of Sweet and Smokey Flat Iron pepper.

          In between watching Dancing With The Stars and The Masked Singer,..🙄.. I did a steak and veggie stir fry tonight. I decided to use one of my Costco ribeyes for the steak, thinking I’d get a better taste than a cheaper cut, such as sirloin or round. It was good, don’t get me wrong, but I couldn’t taste enough of a difference to justify the higher cost. By the time it was all mixed together and eaten, I really couldn’t taste much difference. Still really good though!

            gboss I have used cornstarch for deepfrying chicken in Wok prior to putting in my stir fries. But not in a mixture of soy sauce and egg whites as well. I will dredge the meat slices in cornstarch much the same way as flour, then quick fry and set aside then add back to stir fry later. It does bring on a different texture that is along the lines of silky, tender that you mention. It keeps the chicken moist and tender.

            I heard Velvet was going to be this years winner on Singer, but don’t bet the farm there !! On Dancing there’s rumor Stir Fry’s in the running, oh wait that was the pony I had doubled down on at the track. Never mind 😜

            Looks great. You can marinate with cornstarch, soy, etc and it will tenderize as well.

          Looks tasty PJ. Although pricey I guess. But heck. Why not? Gotta live right?
