    I love my WSM 22 .... my first smoke was a chuck roast to make chili! Next thing I did was 6 slabs of ribs, 3 on each rack, laid flat. I’ve done everything you can imagine at this point .... bacon, brisket, pork butt, chuck roast, beef ribs, back ribs, turkey, chicken, ham, duck, pots of beans .... it’s all great.

    I think the learning curve was pretty darn quick and easy, personally. I figured out Harry Soo’s donut for the charcoal, figured out my vents, and voila .... all done.

    I have modded mine a fair amount .... Cajun Bandit door and charcoal ring, No Name BBQ lid hinge, a Fireboard plus fan for long, overnight cooks .... it’s pretty awesome.

    Man, get that puppy fired up! Burn a chimney of charcoal just to get some carbon on the inside surfaces and see how temps work out and stuff

    One huge tip: Get the inside gunked up with carbon and smoke. Your temperatures will be much more stable, and it won’t run too hot.

ID:	563282 First cook was a set of spare ribs. Everything went well. It held temp very well for being brand new and leaking from the door and lid. Held between 232-252 the whole time. It spent a majority of its time in the 232-240 range.
