    My 22" WSM is being delivered today.

    I must say I am pretty excited about this. I have only been using my kettle for smoking until now. I have had excellent results with my kettle and slow n sear. So I am hopeful I will get the same or better results with my WSM. I think I will break it in doing a few racks of ribs. Then Ill take the leap and do a pork shoulder. What was your first smoke on a WSM?

    You know there's not a lot of talk recently about the trusty WSM. I have an 18" and a 22" and I use them regularly in rotation. Just did a brisket two weeks ago on the 22". Mine is fan controlled and holds steady temps all night long. They are truly remarkable little cookers for the money. Hope you enjoy yours !!!

    First cook in mine was baby backs. The WSM is a great cooker and don't limit yourself to just low/slow with it. It is capable of cooking all sorts of food.

    Nice!!! I love my WSM -- has lasted me 6 years. I think I did ribs first, as well. Might I make a suggestion for curing and smoking some bacon soon? I loooooove bacon on my WSM with some hickory chunks.

    Don't be afraid to remove the bowl and use it like a PBC. The best steaks I've ever cooked were in my 14.5 WSM.

      My water bowl holds wood chunks in my garage If I need moisture I drop a pan full on the lower rack. I get much better temp control without.

      Troutman for low/slow I fill the water bowl up about 1/3. It enables me to run with the vents mostly wide open at the beginning of the cook. More airflow = decreased likelihood of bad smoke.

      I use a fan driven controller with a FB so my vents remain closed, totally different animal. Without the bowl I get better control then with. Again I add water to a pan on the lower rack if need be.

    One other thing to consider: Pick up a charcoal ring for a 14.5 WSM and use it for shorter cooks. It will really economize your charcoal usage.
