Which RG beans, out of these, should I use to go alongside chili?
The rule is: no beans IN chili. But chili is traditionally served with beans on the side! Folks can spoon in whatever they want, or eat separately. I kind of want to only choose one of these, but I’m also not against mixing them up. A pound of beans is equal to 4 cans of beans, so it will be .5/.5, .25/.25/.25/.25, etc.
I have:
Eye of the Goat
Yellow Eye
Piquinto
Vaquero
The piquintos will cook faster.
For what it’s worth, I also have a can of red kidney beans. Nothing wrong with kidney beans.

I love Pinquito's ..... like a Pinto, but a bit smaller, creamier, and more flavorful ..... the Vaquero's are good, too. But Pinquito's would be my first choice.

+1 on Pinquito. You also have an opportunity for a bean flight, a sampler of different beans all cooked the same way. I have a tendency to use just 1 bean, then add in other stuff. But simply prepared, with just a mire poix, they are all good and easily compared.

I’ll go against the grain here and suggest one of the beans that is a bit larger so it doesn’t get lost in the chile. Those vaquero beans look like they would be great in chile, or even the eye of the goat.
I think the pinquito beans are beans that should be the star. But, I guess all the beans I cook are done this way…I’m not a beans in chile person, just not the style of New Mexican chile that I make. I know they are different dishes, but that’s just my thought on the beans you have available.
RG Pinquitos are my favorite of all the RGs I’ve tried but I’m going to order a few you have listed there to give them a try as well.
that's why I vote vaqueros... the pinquitos do lend slightly better texture and flavor wise but IMO they are tiny and will hide in some chilli recipes.

barelfly The vaqueros are pretty close to the same size as the piquintos. The yellow eye and eye of the goat are quite a bit larger.
I’ve never cooked the vaqueros or the piquintos. The yellow eye and eye of the goat are great, I’ve reordered both of them a couple times. I think these are my third bag of each.
cooking wise the vaqueros stay roughly the same size as pintos, and the piquintos cook to about 3/4 to1/2 the size. I've only had 2-3 bags of each ever, but that's what I think I recall.
