Asparagus for sure, you can season them the same as the meat or to compliment the meat or do them plain with some sort of aioli which also can be lightly drizzled on the steak... so many options. I like a good steamed artichoke with a smaller portion of steak, but we usually do an artichoke as the star with a side of shrimp or light protein.

Some combination of potatoes (several variations), sautéed ‘shrooms, roasted Brussels sprouts, steamed broccoli, grilled asparagus, and/or maybe a salad (preferably Caesar).

Baked potato loaded with blue cheese, bacon, butter, onions, garlic and sour creme. Have not had it in over a year, but that would be my ultimate!

                        Asparagus is pretty great though.

No doubt , TRUE baked potato. Greased up with bacon grease and salt. Then baked (Oven) at 450 deg for about 45 min. Sides might include asparagus, brussel sprouts . The tater is there to soak up the juices and once the inside is eaten...slap of butter and roll up sliced and eat.

You sound like an experienced tater eater.
