I went and bought some more from HEB today, I'm going to need some more for my hot sauce business plus some more for me - I'll use some in the Team Cook and leave the ones in the freezer alone. This time the cases they got were 18 lbs and the peppers were pre-bagged in 2lb increments inside the cardboard case. Price dropped a quarter/ pound from last week.

I was going to buy some Pueblo Chile this year to compare with the Hatch Chilies but the Pueblo farms are smaller and apparently don't get a volume discount from UPS or FEDEX. A bushel of Pueblo Chile is $45.00, not bad. But with shipping it comes to $138.00.

It took Fresh Chile more than 3 days to respond to my phone call, but they made it right. Received my order today. Cancelled the credit card dispute. Now, on to roasting them and figuring out what to use them for! Probably start with making a salsa - so if anyone has recommended recipe that would be great.

Last order of the season: 25 lbs of Red Hatch! I received 50 lbs last week, 26 lbs unroasted plus 9 lbs roasted went into this year's hot sauce production. The rest was roasted and diced.
All of this 25 lb box will be for my own use. I just now roasted them - took about 20 minutes for the whole box. I divided the box into three loads for roasting: this seems to be the ideal amount to load into the drum roaster.
