22 lbs of chile after roasting, skinning, destemming, and deseeding gave me a yield of 8 1/2 lbs of roasted peppers for the freezer plus 1 1/2 pint of Hatch water. Vacuum sealed in 1 lb bags, the extra half pound will be used this weekend.
* I forgot, I roasted 2 lbs separately for my hot sauce so the yield was a little higher.

John Henry When I roast the chiles I put them into a deep steam well pan, cover in foil, and let them steam and cool down, then into the fridge until I have time to remove the skins. They ooze a lot of liquid which I call Hatch water. It is basically Hatch chile stock, I use it to make tortillas or to flavor other foods - like you would use chicken stock.

- If not cooking outdoors, I am cooking on the stovetop with my 14" carbon steel wok, 12" CI skillet, or in the oven with my two Lodge CI pizza pans, or two dutch ovens. I've also got a nifty Lodge carbon steel grill pan that rocks for veggies outdoors.
I absolutely LOVE hatch chiles, but after roasting, peeling, and vacuum sealing them for the deep freezer 2 years in a row, then forgetting they were in the freezer, I'll probably pass them up this year. I still have last years batch in packs in the deep freeze.
The only local store they show up at here is Kroger, usually around the first of August. And those sometimes can look sketchy.

I used the Santa Barbara Chile Roaster for the first time today and I was saying the whole time "Oh Baby! Why didn't I buy you before?!?" I know most members here only buy a few pounds of Hatch chilies but if any of you are like me and roast 100+ lbs a year I recommend getting one of these. I use a lot for my hot sauce business but I also use a lot throughout the year for myself.
I divided the 25 lbs of chilies I bought from HEB into thirds so that they could tumble better for better scorching. The drum can hold 22 lbs but I think the ones in the center would not scorch if I stuffed it full.
It took a little experimenting with the flame setting:
First batch - I didn't open the valve much, after a few minutes I opened it more. That batch took about 8-9 minutes, I stopped when a couple of the chilies started to fall apart (starting to overcook). The color was OK. No pics.
Second batch - I opened the valve 2 1/2 turns. Much better, the peppers were done in 5 - 6 minutes. I rigged a latch to lock the drum in place using the handle from the OKJ Bronco in the background (I have the extra shelf for it so the handle is a spare part). The drum would rotate the opening upwards with the lid open making removing the peppers harder without this latch.
Third batch is the charm - opened the valve 3 1/2 turns and they were basically done in 4 minutes. Good timing too, it started to thunder when I turned the propane off. (Weatherman: No chance of rain today but the chances increase as we get to the weekend.)

Minimal effort: just a little sweat equity (overcast here), no smoke in my eyes, no burns, much faster. I will probably buy some more chilies from HEB if they go on sale. HEB starts their sales on Wednesdays so the sales end at closing on Tuesdays. Yesterday the chilies were $1.20/lb and today they were $1.98/lb - no bulk discounts. I have 50 lbs of red Hatch pre-ordered, they will arrive in September.
Some additional notes in case anyone wants to buy one: There are a lot of reviews of the Santa Barbara Roaster that complain about a lack of assembly instructions. I'm mechanically inclined so it was easy for me to figure it out but I realized I made one mistake: There are two shafts, one on each side, that mount the drum on the frame. The shafts rotate with the drum using the handle on one side (you can swap sides with the handle). On each shaft there is an extra nut, I thought that this was to help center the drum but I realized as I was using it that the nuts are supposed to go inside the drum to lock the threads like a lock washer (double nutting). This will also allow the groove in the shaft to set in the hole in the frame properly.
Done. Now the shaft is properly positioned on both sides.
Another complaint is that the door is a bit flimsy and the latch is awkward and hard to use. I had zero problems with either. This a basically an entry level chile roaster so I wasn't expecting it to be built like a tank. For my needs it should last many years. The only problem that I foresee is that now that roasting chilies is faster and easier I might buy even more!
I am going to move the propane connection to the left side, this is the side that I stood by and where I mounted the handle. It was easier for me on this side but this came from the factory with the propane hook up installed on the right side making it harder to adjust the flame as I roasted. It is easy to switch: the left side has a threaded brass plug blocking off the tube. I'll swap it to the right side and install the propane nipple on the left.Last edited by 58limited; July 30, 2025, 05:51 PM.

With that, you need to just make a trip to Hatch and buy a truck full! I use to do that with my grandfather when I was a kid. We would make the trip south and he was buying boxes and boxes of it for the restaurant.

There are a couple local places that do big Hatch Green Chile roasts every year and we pick up 40 lbs or so for my wife's business so she can make Hatch Green Chile Biscuits. Always a popular item.

Ooooh!!!!!!! You are gonna have some fun! You could start with SheilaAnn team cook. Green chile, and I’ve posted a number of things on here as have others using green chile. There are a few styles of green chile stew on here as well, something you can make and freeze for other meals!
Green chile chicken enchiladas, green chile brisket tacos, Chile Rellenos, just a few. Heck, roasted green chile on a warmed tortilla with a little butter!!!
