What to do do with Pulled Pork?

Pork Egg Rolls!
Package of cole slaw mix
chopped green onion
Asian sauce of your choice or BBQ Sauce or glaze (I have one with lots of soy sauce in it)
Pulled pork
package of egg roll skins
Mix all together, roll up tightly in the egg roll skin. You can deep fry, but I like "fry" on the grill to make it crunchy. Do spray with some tasty olive oil (or sesame oil) to give your mouth the fry feel. You can get more creative with the base ingredients and add peanuts for a Thai flavor.

Let us know how that comes out FishTalesNC - I love gochugang, and have a jar mixed up still of gochujang based Korean BBQ sauce that would be good with these.

Wow, what can one "not" do with pulled pork! Since you wisely did not commit to any one cuisine by using only salt and pepper, you can fry some up using chili powders and cumin and use it in tex mex things, like quesadillas or taco pie, or chop it and Italian-ize it by using it in a nice red sauce with Italian flavors over pasta. I like to sauté it to achieve a nice crust and serve warm over lettuce with avocado slices and a tart dressing. I also make "chorizo" by chopping it finely, adding garlic, cumin, ancho or other chile powder and a little red wine vinegar and form into patties. There are only two of us, so I'll make a big shoulder and vacuum wrap it into 1 lb. chunks and freeze. You can pull it later, or not and cube it for chili or serve it sliced with onions and peppers.

Does what you do with it depend on what rub you use? Would pulled pork made with memphis dust be good for Mexican dishes or chili?

there is so little rub on the finished product (unless you add more in after it's shredded) that it doesn't make a terribly huge difference (unless you get a lot of bark)
i would think memphis would work with mexican or chili. maybe not chinese. it all depends on how you like it

Not sure the rub is going to preclude using leftover pulled pork for whatever dish you wish to fix. In fact, just salt and pepper is enough to get great pulled pork. You can use Memphis dust and later fix tacos... don’t see why not.
If you use some heavy bbq sauce, that may overwhelm the pork and limit your ability to repurpose leftovers.

One thing we love about pulled pork is that it freezes and comes back great, so long you vacuum pack freeze and warm it sous-vide. It’s versatile and it will kick up a notch any weekday routine busy day dinner.
Try making something different, like empanadas. Pulled pork makes excellent empanada stuffing.
I prefer fried empanadas, but baked workers really well too. You can make your own dough or just used a frozen empapada disc. In a pinch, I find Goya’s wheat flour empanada discs in the frozen international - Latin food section at my local Publix.
Another er way we enjoy leftover pulled Port is with arepas. Easy to make as well. Something different.
BTW... our preferred way of fixing fried empanadas is with corn flour instead of wheat.
The most challenging thing here is the forming of the empanadas. It does require some skills. It’s not difficult, but it’s something that comes with a bit of practice.
Nothing wrong with an ugly empanada that taste good, so hopefully it’s not too intimidating assuming you haven’t made this before. You may be an expert already, so I don’t want to speculate. Just suggest something different and tasty.
