    Still on a Bacon Kick

    I've been hitting the bacon pretty hard lately. I've got it down to where each batch is consistent. I've done as little as five pounds at a time, up to forty five pounds. Same results each time. Even the kids are pitching in. Did twenty one pounds this past week, then smoked and sliced it on Saturday. The Wife and kids got me a new slicer for Father's day, and this thing is a hoss! It made quick work of that pork belly.

    That is awesome! This one made me smile, thank you for that! Having a high quality slicer is great for things like this, especially if you have 45# to deal with.

          He definitely has that look! LOL! But that's the best part for me. Watching them get to enjoy the food that they had a hand in producing. They are really proud of what they did. When they have friends over, they'll tell their Mom, "Can you cook some of that bacon we made so our friends can try it out?" LOL!

                  Nice slicer @SwampDonkeyzBBQ! I am still waiting for my $200 Amazon special to die, then something serious. Problem is the thing is 6 years old, made it through probably 960 pounds of bacon (40 lbs, 4 times a year x 6 years). Of the 40 pounds we make each quarter, my 4 person family probably directly consumes 30 pounds of it, as we eat bacon sausage and eggs every morning. Hopefully I can warrant a LEM soon buddy!!! That's how you go through 40 pounds of bacon Troutman !

                      You are inspiring me to make more bacon!

                      I just pulled the last slab of home made bacon out of the freezer a day or two ago, and sliced and fried some up this morning. Mmmmm. Sam's Club near me quite putting pork belly out, although they may still have it in cases in the back. Gonna check out Costco today to see what they have out for pork belly, as its time to make some bacon!

                      Q: Are there any disadvantages to pre-slicing all the bacon like that? I guess not, since store bought is presliced. I've been freezing the smoked bacon I was not using right away whole, and slicing it up before use, and putting the slices in a zip lock bag for the wife's use.

                        jfmorris I've found no disadvantage to slicing it before storage. I put the slabs in the freezer, straight off the smoker, not only to stop the cooking process but to get the slab firm to make slicing easier. After slicing, I place parchment paper on my scales then weigh out two pounds of bacon at a time. I wrap the two pounds in the parchment paper, then vacuum seal and freeze. Before I had a vacuum sealer I would use the same method of weighing and wrapping, but it would go in ziploc bags and I would squeeze as much air from the bag as I could before sealing it all the way.

                          Vacuum sealer definitely a better option for long term (over 30 days) freezer storage!!!

                        You got that nailed. Slicer and vac sealer are both still on my MCS list. Never ending as the list gets longer all the time.
