All of that worry was for nothing. Unwrapped shortly before noon, IT was low 150s. People were picking on it before I had it pulled. I think this was my best one yet. Niece and Nephew loved it, made the stress and lack of sleep worth it.
I'm still amazed how fast this butt cooked, it never stalled. All of the previous butts averaged 2-2.5 hr/lb, this one was just over an hour.

Everyone is using coolers! When staying home I use an 18 QT Nesco Roaster Oven on warm as a faux cambro, with the same setup - warm towels and meats wrapped in foil. On the plus side the inverter in my truck keeps it running just fine too. It's somewhat insulated because it's a pan in a pan; it needs a thick towel on top when unplugged because the lid is a single thin sheet of metal. I haven't really tried to see how long it will last unplugged, but with well sealed foil and towels I think a handful of hours is certain. The tabletop roaster is one of the most versatile things I have (that requires electricity).
