    Canadian Bacon/Back Bacon

    After we had eggs benedict this morning I was thinking about making my own Canadian bacon. Can I use Meathead's bacon brine and just adjust for weight to make Canadian bacon?

    Use the ham brine.

      Thanks Meathead! I just made some using a recipe that I cough, cough found elsewhere. They were way too salty for my taste. I will take a look at the ham brine and give that a try.

        I just made up a batch of Maple Bacon and Canadian Bacon using Meathead's brines. I used pork bellies for the maple and a pork loin for the Canadian. Both came out really nice.

          Thanks jragle, I looked at the ham brine and it looked salty. One thing I really like about MH's regular bacon brine is that it does not taste very salty.

          I will have to pick up some maple syrup and pork loin this weekend.
