also, always, always, always save the bacon fat after you cook it. then, make yourself some candied bacon and there are a MILLION things you can do with it. my personal favorite is maple bacon marshmallows.
If you have ambition roll the next one into porchetta. You will need to research before and get some fennel powder. I did one with loin attached last year. My butcher was humbly amused when he took me into back to cut to specs.
