Glad to hear from your part of the world, as Germany is my ancestral homeland, and I have spent some time there. I'll admit that Germany is not great on BBQ--yet, but just thinking about Gasthaus food makes me drool.
I could tell you some tales about some of my first cooks, and even though I am still a novice my finished product keeps getting better, in fact we had pulled pork sandwiches for lunch today.
I suspect that if you incorporate some of the above suggestions you will be amazed at the results. You are very close to lip-smacking BBQ. Pretty good for a first attempt.
