    Pork and beef ribs length

    Hi to everyone !! Is there a perfect length to the
    perfect size with and grith for smoking ribs I like saint Lewis style .

    I'm sure there is. I would have no idea. Im Just a cook. From what I could gather, bigger is better. Right??

      No, you pick what looks great to you.
      You can always trim before cooking.

      For St Louis cut I usually take 1-2 ribs off each end to square them up. I also trim any excess fat/meat on the side where they sometimes keep a lot more meat than normal. I generally like them as uniform as possible. Obviously you lose 3-4 bones per slab but ribs are relatively cheap
