Finally scored a pork belly!

    Lookin' good. I did kinda the same thing richinlbrg, except I cured and smoked the whole 3 chunks of belly in 2 chunks of maple and 1 regular. Mmmm. I'm not sure which I like better because I thought the regular ("simple") was sweeter than I thought it'd be, in a good way.

      Huskee , I was SHOCKED at how sweet the non-maple cured one was. Thought perhaps I had screwed up my labeling! MMMMM MMMMM GUUUUD

        Did you try some fresh off the smoker? Where I get my fresh smoked Bacon, the guy slicing it needed to "even it out" some and ate the piece. Convinced me of the quality (not that I wasn't already a fan of their products).

        I picked up some belly and a pork loin recently and have been challeneged by my wife and one of her c-workers to make porchetta. Not sure how that is going to work out, but i am gonna give it a shot.

        I just got done with my second round of pork bellies. Both times I used the maple syrup recipe. I was a bit disappointed when I couldn't get that maple syrup flavor to come thru. Almost non-existent. Does anyone have any ideas on how I can get more maple syrup flavor into the belly? I was thinking of heating up the maple syrup and injecting it into the belly along with the brine.

          I cook the bacon in maple syrup as it frys. Insanely good.

          Paint the bacon with a light coat of syrup as a glaze during the smoking process. That will amp up the maple taste.

          Use REAL maple syrup. or Agave nectar. If i don't have any Syrup at home. I always go with Agave Nectar.
