Hi, my name is Darrell. I'm an OTR truck driver for over 25 years. During my off time I love doing backyard cooks. I have a 48" Lang Deluxe smoker, Rec-Tec pellet smoker,1 Weber Genesis 330, 1 Weber Performer (blue), 2 Weber kettles (1 black and 1 Copper), 1 26" Weber kettle, a WSM, 8 Maverick Redi Chek thermometers, a PartyQ, 2 SnS, Grill Grates, Cast Iron grates, 1 ThermoPop (orange) and 2 ThermoPens (pink and orange) and planning on adding more cooking accessories. Now I have an Anova sous vide, the Dragon blower and 2 Chef alarms from Thermoworks.

Mr. bones and DWCowles, thank you for the nice comments about my ribs. I really appreciate it.
Jerod, my ribs went on at 8:45 Mountain Standard time and came out of the smoker about 5:30, that is almost 9 hours and 7 and a half of that was at 225, maybe I sprayed them too often, I usually do it about once and hour. I also turn up the temp before I open the smoker so that it will help to keep the internal temp from dropping too much. Maybe I need to cut back on the number of times I spray, I did notice that the first time I tried the bend method the temp dropped from 225 down to 165 to 170. Don't think this helped the smoking process. Also the outside air temp was in the lower 60's too. Guess I just need more practice and more practice and more . . . . . . . . . . . .

sptrainnut, I assume that sp is Southern Pacific Railroad? You a nut for the full size version? I ask as I am into (in a very small way) Lionel trains.
