Funny you should say this about OM rmeugene my bestie’s ex is Japanese and he makes the best fried rice! And only OM will do! I have gifted him other high end bacon so he could make me fried rice. But only OM makes his dish unique. Go figure!
I just started buying Swift's Double Smoked. They sell it at Wild Forks. It has become by back up. My primary bacon is still Berger's Smokehouse steak bacon. Seriously thick and no water.
Same here Michael, I love the fat part as much as anyone, but not when it’s the biggest part of the bacon. In fact when I called Kountry Boys I asked her about the amount of meat in their bacon. She told me that yes, they intentionally make theirs with more meat than fat.
The Fresh Markets Applewood smoked bacon is my go to. I think it is Neuske's. I like mine pretty well too. I haven't made any in awhile; I think I'll put it on the to do soon list
Fresh Market has Nueske bacon and they have their own house brand that is a little different. Both are good, but Nueske is probably a little better. I only buy their bacon on the days it is on BOGO/half-price.
I generally just buy the store brand here locally and it’s pretty good.one of my favorites it goes on sale is Hill’s bacon. They’re out of Pendleton, OR area and their bacon and sausage are both great. Same with Hemplers.

For several years I’ve been running the Kirkland bacon from Costco. It’s an “average” thickness and is sold in a 4-pack of 1lb each. It’s thin enough to wrap jalapeño poppers, yet thick enough to stand on its own.
Recently I bought a pack of some “fancy” thick cut stuff…sadly, I don’t recall the brand. It worked out to about the same price per/lb, but obviously had fewer slices.
My theory…it would taste better, and being thicker I would be satisfied with fewer pieces in a meal.
My experience…taste wasn’t significantly better, and they shrunk so much I had to use just as many pieces.
My verdict…sticking with the “regular” stuff from Costco. Although I’m always up to try something new…at least once!
