Suggestions for Leftover Spiral Sliced ham

I cooked a Spiral and am looking for "What to do" recipes for the leftover ham.
Myriads and myriads of recipes online.
Besides sandwiches, what is your favorite GoTO recipe for leftover ham,?
    Big thank you in advance.

I’m a big fan of ham for breakfast. Ham and cheese omelette, sautéed ham and sunny side up eggs, and of coarse any syrup you get over on some ham from you waffles is so good. I like to chop a bit up to go in pinto beans also.

I've been buying them and smoking then packaging into 1lb or so and freezing. We do a lot of ham in my house. Breakfast and sandwiches, sometimes for dinner, we do grilled ham & cheeze and ramen, etc. Also, as above, omelets, etc.

I love ham anything or in other words, anything with ham. 🤣🤣

One of my faves is scalloped potatoes with ham. Plenty of recipes online. All very easy and also very tasty. Or a spin on this is Au Gratin potatoes with ham. Use lots of ham and it’s a great entree.

I got this recipe cooking casseroles for the poor in Baltimore. When I cook these I always do one for home dinner too. I suggest to add a bit of spices. Whatever you like.

            Ham and potato caserole:

            1 teaspoon salt
            3 cups cubed potatoes
            ½ cup butter
            ½ cup chopped onion
            3 tablespoons chopped parsley
            2 cups drained canned peas
            2 cups chopped celery
            3 cups boiling water
            Milk
            ½ cup flour
1 ½ lbs. cooked ham, chopped
1 cup grated processed American cheese

Add salt and celery to boiling water and cook uncovered for 10 minutes.
Add potato and cook for another 15 minutes; drain, reserving liquid.
Add enough milk to the liquid to make 3 cups.
            Melt butter in saucepan.
Add onion and cook until soft.
Add flour and blend; add milk mixture gradually, stir and cook until thickened.
Add ham, parsley and peas to potato mixture and put in aluminum pan.
Add white sauce and sprinkle with grated cheese.
Bake uncovered in pre-heated 350 degree oven for 30 minutes.
Let cool for 10 to 15 minutes.

Hppin’ Johns with sound great, but we will be doing out Hoppin’ John Jambalaya on New Year's day along with our cabbage casserole which might benefit from some ham,

Ham salad/spread, sweet potato and ham soup, greens with ham, quiche, pizza, and ham/potato chowder are some uses that are not listed above.

Yes +100. After ham sandwiches, ham/cheese omelets, if the bone is kept, split pea soup or Navy bean soup and make sure you reserve a bit of meat for the soup.

All in for omelets. Also love ham, egg and cheese sandwiches. But I love to take the leftover bone with ham and make a ham and bean soup with grilled cheese sandwiches.

Well, I ate some for lunch. I'll eat some for dinner. Then tomorrow I'll have more for lunch and probably dinner again...

Ham is one of the few things I dont mind eatng the same way multiple times. I just alternate plain hot and cold as well as the obvious sandwich.

Scrambled eggs or omelets as well as a couple different soup options are my go to for other uses.
