    We all should be cutting our own boneless pork chops.

    I don't remember exactly when or how I had the light bulb moment that boneless pork chops are just slices of a pork loin. And, most importantly, pork loin is usually cheaper per pound than pork chops.

    My HEB sells a value pack of thick cut boneless loin chops for $3.63/lb. They sell pork loin for $2.38/lb. They were out of pork loin today, but they did have a "center portion" for $2.69/lb.

    That 3 lb loin yielded me six thick chops. That comes out to $1.35 a chop! It's a dollar less per pound if I pick up my knife and slice the silly thing myself!

    Here we are, all vac-sealed up and about to go into the freezer. (I thought I was cooking tonight, but forgot my wife is off at a friendsgiving thing.)

    In this time in which everything is getting stupidly expensive, every little bit helps.

    (Of course, I purposely said boneless chops. I doubt many of us have bone saws sitting in our kitchens.)

    Love getting a whole pork loin for under $2 a pound. One loin will get us about 4 or 5 meals and costs $10-$12.

    I usually slice off maybe an 8-10 inch piece and smoke it for one meal, slice some chops for another, slice some thin chops for breakfast, and cube up some for sweet and sour pork or pork fried rice.

    Agree. Done that for years. Loins are dirt cheap and grilled thick loin chops are excellent! Especially wet brined. Yep, heresy I know. Try it.

    Also great on grilled pork is Heaven Made Products' Neau Bay.

      I got my parents hooked and now I don't just buy whole pork loins at Costco for me, I also buy for them. They keep forever vacuum sealed in the freezer, and for two people living in a household, custom packages of two chops in a package is just right for a meal. Having company? Thaw more than one package. B

          I just did this yesterday. I bought a whole pork line at Costco. I think I got about 12 chops vacsealed in 3 chop portions.
          I also cut a 3.3 lb hunk off of it first, gonna cure it, smoke it, and slice it thin as Canadian bacon.

            I do it all the time. I’ll cut thin pork chops from the all “white’ meat end for my better half. She does not like the “dark meat” pork. I’ll cut thicker chops from the other end for me and depending on the overall length of the whole loin, I’ll cut either one or two roasts out of the middle to oven roast with kraut.

              This is an excellent point. I just checked and HEB sells the dark meat chops for $4.05/lb! That is twice as expensive as getting them from the loin yourself!

            I got a rack of pork from Costco today. Eight little porkchops uncut with tiny little bones. I have only been familiar with this product for appx 6-8 yrs. The whole thing was just under $20 and weighted just under 7 lbs. The first time I tried them was for a family meal. Kim's dad, being a butcher and butchershop owner said it was the most flavorful, tender cut that he had ever had.
            A recommendation does not get any better than that. I only see them near Thanksgiving, Christmas n Easter. Then they disappear fast. If you see one give it a try.

                  Costco near me had 8 bucks off boneless pork loins. So that’s got me about 8 lbs of pork loins for under 10 bucks. I’ll take that any day of the week.

                  gonna keep one decent sized roast and mostly thick chops, some diced for quick dinners. Maybe a few thin chops. Very easy too.

                    tstalafuse I regret not getting a second one now, but I will be there tomorrow morning. I turned the last one into 8 thick chops, 1 2lb roast, and two bags of stir fry slices. It's also such an easy trim/breakdown. Barely need to do anything but chop it up. I'm putting a set of chops into the SV this afternoon for dinner.

                  Surely the way to go. And comparing pork prices to beef right now it is even an easier decision. Not saying pork is better, just saying the price of beef is going through the roof. This thread is a great reminder. Thank you!
