PBR is actually the cheep beer of choice in my house, but I have up alcohol for lent. Went well with sweet tea, sourdough dinner rolls, pickled okra, and boiled corn.
So THAT explains my conf00sion with some of those pictures! I was gonna cry foul on being misled or you putting pics together from two cooks or sumthin'!
realdocBBQ yeah cutting board won't fit in icebox, so after truss it goes on cookie sheet and cooled. The bacon gets laid out on the cutting board when it is time to wrap, then on a wire rack and back in the icebox while I get pit to temp. Then rack and all in pit. After pit, it goes on a broiler pan that the wire rack sits way up on top of so the bacon crisps all around. Yeah a few dirty dishes, but worth it.
