I've been buying my pork butts from a local butcher who is retiring and going out of business. So I need a new source. I'm a backyard cook and buy only one or two butts at a time.
Where do you buy yours? Does Kroger sell quality butts?
Same here, I get mine from local supermarkets. I watch the local sale adds. When butts go on sale I go get 2 or 3. As far as quality we may be looking for different things. I like a butt with some fat and quite a bit of connective tissue. That looks bad in the package, but cooks down to some serious moisture and flavor.
Costco sells a twin pack of boneless that I would buy if I needed to feed a lot of people. Otherwise I buy them at the local grocery store. The last 2 I bought were from Mariano’s (Kroger). I’ve bought a few from Jewel (Albertsons) but they were injected with a solution. They were fine but I’d just as rather avoid buying those going forward.
Our local Kroger City Market has been fine. I'm not a fan of the Costco double pack. The ones i have purchased seemed to be cut, butchered, badly. They need to be tide up with string in order to smoke.
Costco is my go-to. I freeze the two in the pack separately. I like the cut-out for the bone because it gives me more surface for rub. That's only for flavor only in the cuts - I tie them to make uniform thickness. Good meat - that's why I buy at Costco.
I buy the Costco 2-packs fairly regularly. They are a little "floppy" because of the removal of the bone. I don't bother tying them up, just get some rub in all the crevices, and let it ride.
Some of those smaller floppy bits get done relatively quickly, and those become a mid-cook treat for the chef.
Injected or dejected I’ll buy em all....local grocery store tossed butts on sale every three weeks or so. I’ll grab four at least.
Costco’s in this are just a show so don’t even go there
BJ's Wholesale Club for bone in. An added plus is that they'll slice them for blade steaks upon request. I'd buy them at Costco but they are only boneless, they don't slice, and they don't sell pork rib chops.
