    Upping my pizza game tonight.

    I haven't made a pizza in a couple months. I received ken forkish: the elements of pizza as a Christmas gift, and made his 24 - 48 hour dough last night. This is the first time I'll be cooking a homemade dough in my Blackstone pizza oven (been using supermarket dough since I bought the oven). I'll use one of his sauce recipes as well, some fresh mozzarella, and Applegate uncured pepperoni. Wish me luck.

      Hmmm.... that sounds good, of course I don't have a pizza oven. And I don't think I could get decent pizza dough here. I doubt I'm talented enough to make it. lol Would really love to have a cool fire-baked oven pizza place nearby.

        If this dough is successful it will be surprisingly easy to make. It contains 4 ingredients, and It took about 2 minutes total of mixing by hand. The sauce recipe of his I'm using is only 2 ingredients (canned peeled tomatoes and salt) pulsed in a blender.

            Honestly my one major concern is cracking a stone with the colder temps outside right now. I'll try to warm the oven gradually in hopes of avoiding that.

                          I'm going to adjust the hydration level next time around to account for the hotter oven. The dough recipe i used was 70% hydration which was designed for a regular home oven. I'm going to take that down to 58%.
